Egyptian peppers are available in two main windows: December to March and June to October. Supply includes bell peppers in red, yellow and green, as well as chilli peppers.
Bell peppers by colour
- Green — harvested before full colouring; firm with a slightly bitter taste.
- Yellow and red — harvested at full colour; sweeter and more aromatic, with a higher retail price.
Colour uniformity is one of the most important quality criteria for coloured peppers. Specify the minimum percentage of surface colour you accept.
Grading
- Size by diameter or weight per fruit.
- Shape — blocky, well-formed fruit with three or four lobes.
- Firm walls; glossy skin.
- Green, fresh stems.
- Tolerances for sunburn, cracks, soft spots and decay.
Packing formats
- 4 kg single-colour carton — peppers packed by size.
- Mixed “traffic-light” carton — red, yellow and green together for retail.
- Chilli carton — hot peppers packed by type and length.
- Private label and retail packs on request.
Chilli peppers
Chillies are packed separately by type and length. Specify pungency expectations, length, colour (green or red) and straightness. Chillies are often combined with bell peppers in the same container, since conditions are similar.
Shipping
Peppers are chilling-sensitive. The typical carrying temperature is +7 to +10 °C at 90–95% relative humidity. Below this range, peppers can show pitting and soft spots; above it, they lose firmness and shrivel. Peppers combine well with cucumbers and eggplants in mixed vegetable loads at compatible conditions.
For coloured peppers, the price is in the colour and the firmness. Specify both and protect them with the right temperature.
